When it comes to Hyderabadi biryani, traditionally non-veg is added to it, but in vegetarian options, many vegetables are added to it. Dry fruits are also used in this.

- 3 cups cooked rice
- For making gravy – 2 tbsp oil
- 2 tbsp ghee
- 1 bay leaf
- 1 piece cinnamon
- 3-4 cloves
- 1 star anise
- 1 tsp Shahi Jeera
- 2-3 cardamom
- 1 medium onion finely chopped
- 1 tsp ginger-garlic
- 2 large cups vegetables (carrots, cabbage, peas, potatoes, beans)
- 1 cup curd
- 1/2 Kashmiri red chili powder
- 1/2 tsp turmeric
- 2 tsp biryani masala powder
- 1/2 tsp salt
- 2 tbsp coriander and mint finely chopped
- 1 cup water
- 1 cup cottage cheese
- 1/2 cup fried onions
- 1/4 cup saffron water

- First of all, to prepare biryani, heat ghee and oil in a pan. Add the spices to it and fry it for few seconds.
- Add finely chopped onion and fry for 2-3 minutes and now add ginger and garlic paste and mix it.
- Add the vegetables that you had cut and cook for 2 minutes. Now add curd, red chili powder, 1/2 teaspoon turmeric, biryani masala, salt and green coriander and mint and cook on low flame for some 5-7 minutes.
- Add water to it and leave it to cook covered for 15 minutes. Finally, add paneer cubes and cook for 2 minutes. Your biryani gravy is ready. Divide it into two equal parts and keep it.
- Spread a layer of rice over this prepared biryani gravy.
- Add mint, green coriander, fry onion and saffron water to it. After this, spread another layer of gravy in it and spread the rice again and add saffron water, fried onion and biryani masala to it, followed by ghee, mint and green coriander.
- Now put the lid on it and close it by applying flour. Cook it on low flame for 15 minutes.
- Your Hyderabadi Veg Dum Biryani is ready.

This South Indian tangy pulao is made from chickpeas and urad dal, flavored with tamarind pulp.

- 1/2 cup tamarind pulp
- 3 whole red chilies
- 1/4 cup curry leaves
- a pinch asafoetida
- 1 tsp mustard
- 1 tbsp chana dal

- 1/4 tsp fenugreek seeds
- 1/2 tsp red chili powder
- 1 tbsp peanuts
- 1 tsp salt
- 1/4 tsp turmeric powder
- 1/4 tsp jaggery oil

- First of all, heat oil in a pan and roast peanuts and both pulses in it.
- Add curry leaves and dry red chilies and mix them till the lentils crackle.

- When all the things are mixed well and the jaggery also starts melting a little, then prepare a thick gravy by adding tamarind paste to it. Add cooked rice to it and mix everything and cook covered for 2-3 minutes.
